CyberFuss: When dining out I always ask for a table near the kitchen in hopes of overhearing the chefs talking recipes. Worked like a charm last nite. Turns out that for the big event last nite, Le Jardin’s owner brought in a chef from the Gaspé whose specialty is Cod Cakes. Jardin Kitchen Manager had forgotten to get any cod though, so out-of-town chef got the night off and didn’t make any. But I overheard the chef from bouffe! pumping her for details until she finally broke down and gave it to him:
1. Soak salt cod in cold water overnight. Pour water out in morning, add more water, soak until pre-dinner then drain again, add more water and boil cod.
2. Boil some potatoes. Meanwhile, fry some diced onion and celery.
3. While cooked cod drains, mash boiled potatoes and combine with onion mixture. Add some parsley, butter & (this isn't in Carmelita's recipe, but it could help keep things together for those of you who don't have her years of experience) a couple eggs. Then add cod, breaking it apart with a fork. Mix well.
4. Shape mixture into 3" patties. Coat with seasoned crumbs, then fry in safflower oil, 4-5 minutes each side until golden brown.
